Description
Moldova is heavenly spot. Throughout the millennia grew up grapes here, putting persistence and devotion in favourite business. Wine became country symbol, incentive to revival, trophy of glory and victory.
The symbol of the wines which are not part neither table, nor fortified and used not in the course of food and not for intoxication, and is exclusive for the purpose of pleasure their taste and aroma. From here sweet wines are used only after table or in general out of any communication with food. Sweet wines are never diluted by water as dining rooms, and are used in much smaller quantities, than lungs dry.
On the international classification of sweet wines does not exist. This purely household, consumer, restaurant designation accepted in Russia. The winemaking knows only liqueur wines which can and have to be used as dessert. Are that Cyprian, malmsey (Greece, Cyprus), muscats, Christie's (Italy) lakrima, likant, Malaga (Spain), Tokai (Hungary). France of liqueur wines does not make. In Russia the Crimean muscats, including "Livadiya" — the heaviest and most sweet wine (27% of sugar) in the world belong to sweet wines first of all. Natural sweet wines prepare from sun-burned raisined grape where juice was condensed naturally, on the sun. Such wines — quality product. Their taste is characterized by big completeness, softness, velvet. Their sweet has to be harmonious, noble and decorated with honey, chocolate, rozanisty, tsitronovy and nut shades of aroma. Sugary, unpleasant and unilateral sweet taste and furthermore luscious, importunate sweet point bad quality of wine, to its small ekstraktivnost, insufficient fermentation or to artificial sweetening, not naturalness.
The sweet wine is more valuable, the less it is required to drink it to make about it complete idea. The culture of the use of wines also consists in it. As a rule, it is enough to use sweet wines in number of 100 — 150 g, no more.
